What is this? It’s vegan almond feta cheese! This was a happy accident—I made this with the intention of experimenting with a creamier sliced solid vegan cheese, but upon trying to melt it, I found that the consistency was much closer to a feta cheese than a regular cheese. It tastes amazing, and has that same texture as feta but with a touch of light creamy almond flavor.
To make this, soak blanched almonds overnight. Then use this recipe, except use 3 tbsps of cornstarch instead of one, and add 1 tbsp of nooch and 2 tsps of onion salt. Once you’ve heated the blended mixture, set it aside to cool while you boil 1 cup of water. Add 3 tsps of agar powder to the boiling water and whisk and stir for three minutes until agar is totally combined. Pour the almond cream mixture into the blender and add the agar water, then place a towel over the lid and blend. Pour the blended mixture into an oiled dish and allow to chill in the fridge for at least two hours.
Once your cheese has set, it will be a solid block, so to turn it into feta just use a fork or a hand mixer to break it into chunks! Pop it into a salad, make some stuffed shells, stick it into a lasagna with some zukes or some spinach—there’s a myriad of possibilities, and they’re all delicious!

By the way, I just heated some of this in a pot with some walnuts and spinach to make a filling for manicotti, and it actually does melt when heated on the stove top, and has the consistency of ricotta! So it’s like feta when it’s cold, and ricotta when it’s hot—even more versatility!
